Sushi Chef Hiro-san has extensive knowledge working with fish and various raw ingredients. He is classically trained in Japan and has been artfully creating tasting menus since. His career spans 18+ years both in Japan and here he in the States. Hiro and his wife have been in the USA since 2005. Together they have lived across the country from NC to NV.
